When I’m making Guacamole,

No, before I make guacamole,

as I’m taking the ingrediants out of the fridge,

my heart skips two beats.

In a mad rush, it all comes together,

the cupboard door flies open,

the tortilla chips fly out,

and I stand over the chopping board,

shoving spoonfuls  in my mouth.

I like it simple: avocado, sliced green onion, lime (or lemon) juice, salt, pepper, olive oil.
